Ingredients

1.5 oz Mother Root Ginger

14 oz peaches (about 2–3 medium peaches)

1/2 cup sugar

Directions
  1.  Dissolve the sugar in 5 oz (just over 1/2 cup) boiling water. Once cooled, add the Mother Root (remember to shake 8 times).
  2. Chop your peaches and remove the stones, then add to a blender with the Mother Root syrup and blend until smooth.
  3. Pour the mixture into a plastic container and into the freezer.
  4. Every 30 minutes, use a fork to mix the granita and break up the ice crystals. Do this at least 3 times, then leave to freeze for another hour before serving.
